I am engaged. Can I go to mecca and do hajj with my fiancé respecting all the deen ? Or shall we wait after ?

If you are only engaged and the Nikah has not yet taken place, your fiancé is still a non-mahram to you according to Islamic law. Therefore, you should not travel to Makkah with him to perform Hajj, even if you intend to observe all Islamic boundaries. It is better to get married first and then perform Hajj together as husband and wife.
The Prophet ﷺ said:
لَا تُسَافِرِ الْمَرْأَةُ إِلَّا مَعَ ذِي مَحْرَمٍ
“A woman should not travel except with a mahram.” (Sahih al-Bukhari: 1862)
Therefore, you should wait until after the Nikah.
